A whole chicken is boned by hand then marinated in sugar, salt and garlic, before being lightly oak smoked and filled with a deliciously rich tarragon pâté. Cooked and ready to serve, delicious as a light lunch or starter.

We smoke a number of meats to our own recipe that aim to provide a delicate and not too overpowering smokiness while maintaining a succulent and tender texture.
